St Joseph

Saint Joseph’s Day is on the 19th of March. Joseph is one of the greatest saints, and he is also patron of the Church, family and youth. As the husband of Mary and the foster father of Jesus Christ, he was very close to the Lord. Saint Joseph is known to have been a modest, humble, honest and diligent husband and father. He is a role model for all fathers!

Let’s enjoy a cake on this special day!

St. Joseph’s Cake

Whisk 6 eggs
add 1 cup of soft butter or margarine,
1 cup of sugar,
1 pinch of salt,
some raisins
1 tsp of cinnamon
and 3 grated carrots.
Mix in 1,5 cups of flour with1 tbsp of baking powder
and 1 cup of ground almond or hazelnuts.

Pour batter in greased baking tin, or tin lined with baking paper.
Bake at 180 C (356 F) in bottom half of oven for about 50 min. or until dough is not sticky any more when poked with sharp knife.

Let cake cool down. Draw and cut out lily from paper. Place cut out paper on the cake and cover empty spaces with sugar powder. Remove the paper carefully.

St Joseph is often shown with a white lily – a symbol for purity.
