Recipe for Welsh Cakes
450 gr plain flour
100gr sugar (this time we used honey instead of sugar)
1 tsp of cinnamon, ginger and cloves
1 tsp baking powder
100gr butter
1/2 cup of cream (or milk)
100 gr raisins
2 eggs
oil for frying
Mix everything into a smooth, slightly dryish dough. Roll out as thick as little finger and cut out circles, each 6 cm wide (with cup). Grease the frying pan with a thin layer of oil and fry about 3-5 minutes on each side, at medium heat, until golden brown. Eat still warm with butter and jam, or sprinkle with sugar.
